Zucchini Noodles with Spicy Chicken and Mushroom Sauce

Its been a crazy few weeks with packing, vacations, buying a house, and moving! But I am finally back into the “normal” routine!

Thankfully spring is here, and with it all the yummy fresh veggies! I was so excited to see zucchini back in stock at Aldi. I just had to try out my new tool to make zucchini pasta.

Take your Veggetti – http://www.amazon.com/Veggetti-Spiral-Vegetable-Slicer-Veggie/dp/B00IIVRB3W and make noodles out of all the zucchini, place in a strainer, and sprinkle with about 2 teaspoons of sea salt. Set aside for about 15-20 minuets.

Start making the topping:

Cube and cook chicken – I add garlic, salt, pepper, onion powder and Montreal stack seasoning to the chicken and fry it with a bit of butter until cooked. Set aside. Cut up peppers, onions, and mushrooms and cook lightly with butter. Add the cooked chicken and keep warm.

IMG_2060In another pan take4 Tablespoons of butter and melt it down, add a thickener, like Glucosamine powder (or flour if you don’t use Glucosamine powder, but I would defiantly recommend it, its awesome and very good for you.) Slowly add Cream, bring to a boil and add Cheese. Once your sauce is all nice and hot, add garlic, onion, salt, pepper, and red pepper (only if you like it spicy).  If you are feeling particularly lazy, just add the garlic, onion, salt, pepper and red pepper to a jar of Alfredo sauce (sometime you just have to get dinner on the table!) Once the sauce is seasoned keep warm.

I kind of do everything at the same time, but it does not kill anything if you need to do it one at a time. Just leave your burners on low to keep warm.

Now it is time to make your noodles! Take the zucchini noodles and lay them in a paper towel to soak up as much water as you can. Heat up a skillet and add about a 1-2 Tablespoons of butter. Add the noodles to the hot pan. Cook the noodles for just a few minutes, or until delightfully warm.

Plate the noodles, add the chicken and veggies, spoon the sauce over it all! Top with parmesan cheese and enjoy!

Chicken Alfredo with Zucchini Pasta

Dinner for 2 –IMG_2065

4-5 Small Zucchinis

2 teaspoons of Sea Salt (for Noodles)

4-6oz of chicken

1/2 Cup of green pepper

1/4 Cup of onions

1 Cup of Mushrooms

4 Tablespoons of Butter (divided) You will need more butter if you are making your own sauce.

White Sauce- (or Just use a jar of Alfredo Sauce)

4 Tablespoons of butter

1-2 teaspoon of Glucosamine powder (or 2 Tablespoons of Flour)

1 Cup of Cream

1 Cup of Parmesan Cheese

Seasonings:

1/2 teaspoon of Garlic

1/2 teaspoon of Onion Powder

1/4 teaspoon of pepper

1/2 teaspoon of red pepper

1/2 teaspoon of salt
