This is another great recipe from our Once A Month Cooking Session done the THM way!

For me it was a matter of re-moving from the freezer and just heating it up in the oven till it was good and warm! I added a basic salad and dinner was done!

Sausage Squash Casserole –

Make this a freezer meal-

Layer in a 9×13 casserole pan or an aluminum pan that can be placed into the freezer.

  • 2 medium summer squash, sliced and uncooked
  • 1 medium zucchini, sliced and uncooked
  • 1 lb. sausage, browned

Then mix

  • 1 cup mayonnaise
  • ¼ cup dry minced onion
  • 2 large egg, beaten
  • 1 Packet of Stevia or other sugar substitute
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup melted butter

Take the Sauce and top the Squash and meat, Top with

  • 1 ½ cup shredded Cheddar cheese, divided

Then just freeze!

Dinner time –

  1. Preheat oven to 350°F.
  2. Bake for 30 minutes, or until bubbly and lightly browned.
